Pork Butt

Decided since we finally have some cool fall weather I'd fire up the WSM for only the second time with a 10lb pork butt. This is the 2nd cook on this smoker. My 26" sees 95% of the action. Injected the butt last night and rubbed it down then into the fridge over night. Got the WSM up to temp about 730 this morning. Aiming for 275-300 for the whole cook. Seems to be holding steady at 275 with ease. Really surprised though as it's really windy. I did lava lock the door since the 1st smoke.

It looks as if you're in for a nice morning. It's in the low 60s here, and I'd love to be cooking, but I don't have any room in the freezer for more pulled pork. I guess that's a good problem to have. 🤔
 
Turned out pretty good. Really impressed with this cooker. Only my second cook but after following directions I've read on here for temp Control its really easy maintain temp.

I just vaccun sealed the extra today. Last time I was being lazy and didn't feel like getting the sealer out. But after throwing it away this time I made sure to get it out lol
