Pork butt


 
I did one a few months ago and I think it took about 4 hours @ 275 with no water in the pan. Just foiled it.
 
The ones I've done, both on a gas grill and on my new WSM I usually plan on about 1.5-2hrs per pound @ around 225-250. But even then I usually end up wrapping the pork when it's internal temp gets to around 165-175 to make sure it finishes with enough time to let it rest and get it pulled at the right time for dinner.
 
I cook my pork shoulder at 250F. A 3.5 pound butt should take about 4 1/2 hours, plus a rest time of at least 1/2 hour.
