The smoke flavor was still there. I was sampling as I pulled it and the upper part not covered in the liquid was just as good as usual and smokey. Once I pulled it all and mixed up well the vinegar taste took over but you could still taste the smoke flavor which suprised me. I guessed that the smoke would be gone after cooking in the DO but it wasn't.
Take our regular BBQ meat we are used to and add about 1 cup cider vinegar and mix well, that's what it tasted like to me.
