Pork butt

I made a pork butt in the cold weather today.
It was 28f and icy this morning at 6:30.
The pork only weighed 6lb 4oz.
I cooked it in my wsm18 at 270 for 7 hrs until 168 internal temp and the 300f for the last 4 hours.
I think the cold outside temps made to cook take that long.
Heaven forbid if I went 225f.
We’d be eating tomorrow.

Edited to add,
I used my blower and heat defuser with the drips just landing on the hot defuser.

Looks like it was worth the wait.

I like using the pellet pooper for long cooks when it's really cold outside. May use more fuel, but it maintains temperature well and I don't need to freeze half to death babysitting it:)
 
Yeah Peter it is.
My outdoor thermometer was at 19 degrees this morning.
We stowed away our water hoses to keep them from freezing.
It would suck to fire fight and find frozen hoses.
Luckily no issues with frozen pipes.

I think you have it colder than me right?
 
we're at a little higher elevation than you guys so probably so. it was 4 degrees this morning when I took the dog out. .... good call on the hoses....we put ours away in October each year
 
Make up some pizza dough. Pork Butt Pizza is amazing. Not having a lot of Mountain Man experience, my hoses are outside frozen solid. It's a learning experience :)
