Pork butt with bacon

Hey has anyone ever covered a pork butt with bacon while smoking? I know I don't need the fat but it sure sounds good..... </div></BLOCKQUOTE>Never would have thought to do that but in support of your idea, I've never added bacon to anything and then was unhappy that I added bacon to it.

I love bacon any way I can get it, but in this case I would hesitate because of the way it would interfere with the bark formation on the butt. Still, to each his own. Let us know how it turns out.

For a typical low-slow butt cook I doubt that much would be left bacon wise.
Though you never know till you try it..

It's hard to think of bacon not going with anything. I would worry about overcooking the bacon and add it toward the end of the cook. Heck, add some bacon as a side dish too!

I used to add a maple bacon weave once the butt hit 160 but have since stopped doing so. If you do it from the begining, you're going to burn the bacon. You don't want to shred the bacon with the butt but it does add some nice flavor to the bark. The bacon itself after smoking it on the butt is the best part of it though! Either eat it straight or cut up into small pieces and add it to your green beans. It really makes one fantastic dish!

Maybe smoke it wo the bacon for 5 or 6 hours then lay bacon on it! ???? That is what I would try.

Just an idea: why not put "slits" or even slice into the butt (and I mean fairly deep), insert the bacon and if needed, tie up with butcher string then smoke it?

I know when I put a prime roast just in the regular oven, I put half a dozen slits in the meat and insert 1/8" slivers of garlic in for flavouring.

The same should work for butt and it won't interfere with the bark.

...Or maybe finish a tray of pulled pork with some rendered bacon fat? I have a jar of it in the fridge and I'm smoking two butts this weekend... Hmmmmmmmm...
