Pork Butt - should I cut it.


 
Need some advice, have a COSTCO 15 point butt to smoke on Saturday for my daughter. Will be eaten Sunday.

The question is - should I cut it in half a cook 2 each 7.5 pounders, or cook it whole.

I am leaning on halving to save time.

Thoughts?
Looks like it turned out amazing.

Costco usually sells packed shoulders 2 in a pack.
You can get bone in or boneless,

If I am squeezed for time & need to get the meat cooked I butterfly the Pork shoulder.
It's a quicker method & double the bark.
 
I do same as Chad for my standard overnight pork butt cook. I probably do this 2-3 times a year.

Boneless Costco two pack that is 15+ pounds untrimmed.

I butterfly them both to flatten, cook quicker and increase bark.

One on top rack, other on middle rack in my 18.5. Easy and leaves a lot of leftovers for the freezer.
