My first go on my new WSM 22.5. a 6lb brisket, sprinkled with salt,pepper and weber chipotle seasning. let it rest in the fridge from friday night to sunday morning. Used 1 big chunk of hickory and about 5 small chunks of apple.

Halfway thru , I know, Don't lift the lid, but the thermometer on the lid was saying 325, it was just the sun hitting it.

The end. Smoked for 7 hours and then wrapped in foil and a towel for two hours till dinner. It was tender and tasty but a little dry.All in all a pretty good attempt for my first go.

Good for you, Rob! I've never actually smoked a brisket (never have the money or reason for that kind of meat...yet), but one of these days I WILL attempt it!

You have done well, my friend, for your first try. I plan to hopefully get those same results or better when I smoke my first.

Thanks for all the kudos. i can't wait to fire it up again. I am thinkin pork butt is in order :D
