Poor mans dinner

If you want to go to a good Mexican restaurant ask a Mexican where he eats?
Not a Puerto Rican or a "Hispanic".

When I wanted to do Mexican Corn (mayo/cheese one) and had to find a couple of ingredients not found in the grocer store, I went to a small convenience store that carries Mexican food, and the lady who cooks there had to come out to help me find what I needed, and also required the cashier to translate. It was the look on her face when she discovered what I was making that she had a big smile and picked up the correct chile and cheese for the dish. In the back of this little convenience store were two picnic style tables with several guys eating.......I'm sure that this place would qualify for "where Mexicans eat".................d

Even in Southern California there are places I will never go back in. They look new and fancy but if they don't use good ingredients and the right cook their restaurant won't last.
 
The ingredients in these tacos may be humble, but thanks to Maribel's culinary prowess, the "whole is greater than the sum of the parts". These are definitely some of better looking meatless tacos I've seen.
 
Well done Maribel! Love how you guys use the performer more than an oven. Nothing better than making a meal for the family outta what you got in the fridge.
 
Those look fantastic. sometimes the simple ingredients make the best meal. that frosty glass looks so darn good. makes me want to have a beer right now. what a great combo.. i have one question. Will six years of Tony Romo be as easy to swallow as that delicious meal?

Thanks for your comment Dave. I love simple food. And Mexican food is very simple yet very delicious....Cowboys will be my team regardless who is the QB or the players...:)

So I ask them where they SHOP for food, and they tell me and I go there ;) Olé
