Poll Idea - How long do you wait between Lighting & Putting the Meat On?


 
My method. No Wait! (WSM “cleaned” the day before).

➢ Bring the meat out to the smoker.
➢ Remove middle/top section. Put meat on top grate, insert Mav probes, lid on.
➢ Prep charcoal ring for minion method.
➢ Light up 12-15 coals and dump onto unlit. Chuck a lump of wood onto the lit briqs.
➢ Put the middle/top section on straight away. All vents 100% open.
➢ Catch the cook temp on the way up by throttling the lower vents only.
➢ Hang about the backyard for an hour, drinking beer, claiming to SWMBO that I need to keep an eye on this or else dinner will be ruined.

I'm with many others here. Straight on as soon as the smoker's assembled. Never had an off-taste, the food is inhaled and the bones field-stripped after cooking so I must be doing something right!

And here I thought that I was the ONLY one here who did THAT! ;-P

Seems that this post has gained a lot of traction - so, Chris - whadda' ya' think? (Unless I am mistaken - It appears that YOU are the only one who can make polls.)
 
I wait about an hour. I just cant put the meat on when it looks like a Choo-Choo train. Maybe it doesnt matter and it looks like some great cooks just throw it on....I just cant
