Planked Salmon w/ Broccoli bundles

It's been a busy week at work, I'm just now getting to post Sunday's dinner. It was a glorious weekend in the PNW, mid 70's both days (sorry Tony, no screen shot).

Purple broccoli wrapped in Prosciutto slices, S&P and olive earl.



Salmon on the cedar, topped w/ Vidalias, green onion, mustard seed, rosemary, rice wine vinegar and oil. I'm also pulling a Marcus.

Back to the grill, brocc on



And plated with a salad



I thought I would get fancy using the Prosciutto, I won't next time. It wasn't bad, but it wasn't good ol' bacon. Thanks for stopping by.
 
Verry nice meal right there! Love the broc rolls. Why dident you like the shutto? Sure it isent as fatty as bacon but it gets crispy so fast(so you dont have to over cook the veg) Anyways taste is a tuff thing to argue about :cool:

I agree it crisps up nice and fast, it seems to lose the flavor, though. Maybe I will try two slices for each bundle next time. More is always better, right?

Sometimes I see thin-sliced bacon in the store and if you can find a meat market that slices its own you could get some there, too. I've found that it's a good choice when the cooking time's going to be too short to get regular bacon acceptably done, and it'd probably be a good bit less costly than prosciutto.
