Pinquito Beans and Smoked Rib Trimmings

These have become one of my favorite beans. My buddy from Lompoc, California sends them to me and as far as I know it's the only place you can get these wonderful beans!

So, I had some vacuum sealed leftover smoked spare rib trimmings in the freezer that had been seasoned with salt and pepper and would be used as a ham hock substitute.

Great looking beans. I also have a friend that lives in Lompoc and he gave me some beans. The bag came with a recipe but didn't care for it.

Yeah, I don't use the recipe that comes with the Pinquitos. I cook these as I would pinto beans.
 
My son is taking some training at Vandenberg AFB, which is right by Lompoc.
I need to see if he can score me some Pinquitos!
 
Wow Larry, that is a nice looking bowl of beans. The only thing I see missing is some cornbread to crumble in there.
