Dear Board,

I didn't want to do a lot of anything but I had a hankering for some ribs and some chicken so I did some country style ribs and a couple of pieces of chicken over cherry smoke.

I will gladly take a plate. How do you like the cherry? It has become my favorite for poultry & pork as of late.

I like the cherry a lot but to be honest I really haven't found a wood that I don't like a lot. I use hickory and apple pretty much equally with the cherry. I just picked up a bag of maple chips to try yesterday, we'll see how they do soon.

Tim with meals like that, you might as well sell that gasser and buy a WSM. Looks awesome!

Dear Rolf,

The gasser will get used tonight for cheeseburgers and grill fries. It's far too cold too soon to fart around with the OTG again tonight. I bought the Genesis for nights just like this one. I'll have the grill fired up and everything cooked in less time than it takes to get the charcoal ready for the OTG. I'll do Winter cooks on the OTG but it will be when the wind isn't blowing 30 MPH. I'll cook in the snow, as a matter of fact I look forward to doing just that, but the wind has to be more settled down than it is today. The Hawk is out today!

Dear Bill,

I can sort of see what I'm doing if I remember to light the side entrance lights to the garage. It's not like it's all bright and sunny, but I can muddle through the dimness and get a meal done.

I just have a hard time switching over from cooking in the summer when it's light enough to see at 8:30 PM to being in darkness for 3 1/2 hours by 8:30 PM. Once Christmas has come and gone the days will be getting longer instead of shorter, and I'll spend more time in the darkness anxiously waiting for nights when dinner doesn't have to start cooking until 7:30 instead of needing to be over with dinner and having the dishes done and put away by 7:30.

Tim, country ribs look fantastic, That reminds me I have some sitting in the freezer :)... Have you tried pecan wood? Its my new favorite (for the month)
 
Dear Mike,

I almost bought some pecan chips yesterday but I stuck with the old reliable cherry and apple. I picked up some maple too. I reckon I need some pecan then?
