Picnic cut vs boston butt


 
I prefer the Boston Butt in comparison to the Picnic but both, done well, are better than excellent. I believe that there is a good bit more waste with the picnic but it's still "Good Eats"...

Dwain, I made a Pernil in my oven last year with a picnic and it came out great. I want to try a picnic for pulled pork. I'll give it a try. I just picked one up for 1.49 a pound. If I screw it up I won't feel that bad. The pork butts around me are 3.49 a pound.
 
The Lechon Asado recipe looks great! I want to try it for Xmas eve with a Picnic. How do you deal with the skin? Cook skin side up or down? Is it good eating? I saw a recipe that called for trimming it carefully leaving one side attached so you could lift it and season under it.

I cooked my pernil by flapping the fat cap and seasoning under it. The meat came out great. I didn't smoke the meat but cooked it I the oven. I cooked fat side up.
