Picnic Cookout - Chicken Kabobs

Hello All,

This week is Mardi Gras break for the kids (yep Mardi Gras is that big a deal around here) - so today I took a subset of the kids (#'s 3 through 6) for a picnic to a (sort of) nearby CoE lake - Flynt Creek Water Park. They were kind of confused because ordinarily I pack heavy for this sort of thing and today I only brought the small ice chest, my charcoal chimney, a cast iron pan and so me foil and utensils - no grill and no food. They kept asking what are we going to have for lunch. And I kept saying they would see. Close to the park, I whipped into the Piggly Wiggly (gotta love southern Mississippi) and told them we would pick out something to eat there. I laid down a couple of ground rules - no hot dogs, no hamburgers, no bratwurst, no 'normal' picnic food and then I turned them loose to figure something out. They soon found the meat case and went through a long process of determining what to buy. "Hey lets make enchiladas" - "no how are we going to cook that on a grill?" "How about tacos in a bag?" I vetoed that one because my CI Skillet was spoken for. Then they found some pre-packaged chicken tenders on skewers with different flavors and said - "I know lets have some kebobs". My daughter looked suspiciously at the pre-packaged bird and said, "Dad I bet we could just get our own chicken and make better ones than these and they would probably be cheaper too" (That's my girl!). So another one chimed in - "hey we could get a bell pepper" - another added "what about some pineapple" - "and I saw some cherry tomatoes in the produce aisle". And a menu was born...

Flynt Creek Water Park

Well this turned out really well. I was very pleased that the kids participated in creative process. We had some good family time and expanded our culinary envelope a bit too. They all really enjoyed the food - even more so since they decided on the menu and helped to prep and cook it. It would have been better if we had used pita bread instead of hot dog buns - but I couldn't find any at the PW. No worries though it went down well. Thanks for looking...

That's great John, always loved to get the kids involved with cooking. Wish I could do more with the grandkids but they're hot dog and burger kids only.
 
Great job John and the kids did great on the food choice. Looks like it was a great family outing for sure.
