First time making this incredible beef…what took me so long?
Had six steaks
cut for me at a local butcher.
Seasoned first with just salt and let them sit out on counter for quite a while. Then put some coarse pepper on them.
Did indirect over some B&B
Took them to about 110 and then seared

Had some chimichurri and a fresh tomato salad and roasted cauliflower.
And a fun game of cards! Cheers!
