Peruvian Chicken with Green Sauce

OK, today is the day!
I just started this project! Chicken reclining in its brine bath, rub made, bird twirler all set to spin. Sadly, I will have to attend a graduation party for someone I don’t know or I’d just sit and enjoy the first (OK 3rd) nice sunny day all spring! The rub smells pretty smoky, I may have been a touch generous in paprika measurement. We shall see, I’m looking forward to this one!

Post consumption haze has lifted a little, WOW! That’s pretty darned good! I will be making that time and time again!

The time was right and I finally tried this recipe. Plated with some Vortex Wedges and corn on the cob.

Lets just say I'm a fan. The green sauce really accents the dish. I think one day I will try the paste on pork.

I used the leftover chicken and sauce to make chicken salad, remarkable!
