I have a new Performer with the gas assist and am wondering how long others let the gas assist light the coals before turning it off.
 
I seem to be having getting temps above 425-450. Everything I've read said the grill should be preheated to 500. I thought perhaps I was running ther gas assist to long on the coals causing some of them to become spent before I even dump them from the chimney. I also am not sure where I should position the lid thermometer, directly above the coals or over the area wher no coals are. When instruction call to cook something indirect over a particular temp where is the best place to post ion the lid thermometer?

You will like the gas assist. How long you leave it on depends on how fast you want to get cooking. The temperature is mainly a function of how many coals in the fire. If you need more heat -- more coals is the answer. When cooking indirect, I always put the temp gauge over the cool side of the grill. I used a probe on the grate the other day and surprisingly, the lid gauge wasn't that far off.

You can just pile briquettes on the charcoal grate and fire up, or put them in the baskets for indirect. I usually put the baskets together over the burner and then move them with tongs to the sides when they are fully involved. You can also use a chimney if you want to get a load of coals started quickly and evenly. It will light faster if you take out the inner cone of the chimney and flip it over so that it points down, putting the coals closer to the gas flame.

The only maintenance issue I have encountered is when I grilled chicken wings and didn't have an aluminum catch pan to put between the charcoal baskets and under the chicken. Chicken is messy and some of the drippings actually clogged the slots in the burner. I had to get a wire brush in there to clean them out. Other than that, it's a great grill -- you'll love it.
