Performer Question

My new Performer is being delivered tomorrow and I'm not going waste any time taking her out for a spin. I have a question for those who cook on one. Do you use the lid vent or bottom vent to control temp?
 
I try to use the bottom vent only especially when smoking something. If you close the top vent to much you can end up with an ash tray taste from the smoke being trapped. Try both ways but try to keep the top vent open as much as you can.
 
I cheat...I use my top lid it much quicker but you have watch out you don't let the smoke back up in the kettle or you'll bitter out your cook.
 
I open the top vent all the way, and throttle with the lower vent.
One thing my brother did, and I copied, he marked his vent ring with percents of open. From closed to 100 percent. It's a great idea, because the way the one touch is it's hard to see closed, and the percent of open is not linear because of how the vent wings are.

By the way, you are going to love your new Performer.
 
Thanks Rich and Chuck. That was a concern I had with utilizing the top vent. That's an excellent suggestion Mark. I had read about that and that's one of the first things I'm google to do. I appreciate your input guys.
