Pastrami Question

OK - I've cooked pastrami a several times, and each has been wonderful. The first time, my boys would not even think about trying it. Now, they're the reason I'm cooking. But, I digress. I wanted to cook the pastrami on Saturday, but I have some evening meetings the next couple of nights. So, I would like to start the cure tonight. Is 4-1/2 days too long? Or should I remove the brisket from the cure on Friday night, rinse, and put back in the fridge until Saturday evening?

No, it's not too long but since you have the option to go the other route (rinsing/chilling on Fri) that would be my choice. A day till smoking, from that point, is fine.

Thanks for the response. I will follow your advice and rinse Friday evening, and return to the fridge until the cook on Saturday.
