PartyQ v. Maverick et-733

Hey guys long time reader first time poster. I am doing my second cook on my WSM. I just got a Party Q and am using it for the first time. The question is the party q reading a steady 230 but my maverick et 733 is reading 250. That's a pretty big difference and I have the probes placed right next to each other. Anyone else have any experience with this. When I do the ice water test with the Maverick it is usually 34-35.
 
Thanks for the welcome and the advice. I'm about 2 hours into the cook now and it looks like the maverick is leveling out. It's now reading 232. I don't know why it was so much higher to begin with. I will do another ice test after clean up this evening.

Ditto, except I have the 732. I usually clip the PartyQ probe to the meat probe (at least an inch way from the meat itself) and situate the pit probe nearby. A difference of 10-15 degrees is normal and (in most cases - ie: other than cold smoking) not detrimental. I've done the boiling/freezing water tests and, independently, both show accurate/consistent temps, so my guess is that it's mostly due to airflow or thermal dynamics or some such magic.
 
How do you all do the ices test? As I understand it, the probe is not to touch a cube of ice, correct?

I've never tested my probes and would like to.
 
There are people more educated on this subject than me, but I fill the cup with crushed ice and water, give it a stir with the probe and then let it sit till it stabilizes, should read 32 degrees.
