Pantry Pork Chops

Picked up some nice 1+ inch thick chops last night, so I gave this a whirl tonight:

Didn't have the required rosemary, but did have some rosemary infused olive oil, so I used that. Pretty nice recipe, although I'd give longer to marinade. Also cooked up some asparagus with EVOO, S&P; and served a nice caesar salad on the side.

Wonderful job. Had the identical meal with home grown asparagus and sweet potato wedges, although the chops I dusted with Larry's original rub. Think mine were a bit more done than yours-still learning to trust my new thermapen. Hard to beat pork on the grill. Think I'll try your recipe the next time.

So inspired with your Pantry chops was I that last night I did them as well. And great they were.

Ditto! Just ran to the store and picked up some chops, whipped up the marinade (first use of the rosemary in my new herb garden) an will let them marinade for about 4 hours. Looking forward to these.
 
Jim, I know what your saying about the marinade time. I did mine for 4 hours and still found myself wishing I'd marinaded longer. Was expecting far more flavor that I got, with the exception of the lemon juice, that came through very pronounced. I'm almost wondering if an overnight marinade is in order. I think it's a great marinade, the chops just didn't absorb it like I thought they would.
