Paddys day meal!!

Good evening! A little corned beef brisket dinner for your viewing pleasure! Started with a 3 pound point (the typical Packaged brisket u will find this time of year!) I think the brisket was 2.99 lb.. Now I am kicking myself for not buying more!
Started in a crock pot on low for about 4 hours!

Moved to the green performer indirect at about 350 with just a tad of hickory!

Added some reds after about an hour!

Moved things back and added some veggies w/ olive oil and S&P for a few minutes.

I love the way this method renders down the fat! Should have made two darn it!!

Plated with reds, veggies tossed with some balsamic vin&feta, cabbage simmered for about 30 minutes in the crock pot that had the brisket, oh and some cilantro mayo on the red and some Saratoga horseradish! Of course a ice cold pint of guiness!

Whew.... Great meal, will need a wheelchair to get around tonight!!

Really delicious meal Morgan. Last night we took a slight break from tradition and went with baked salmon and champ , c/o my wife. It was delicious too.
 
Thanks for the nice response! Was one of my best corned beef cooks that is certain! Looking back at the pictures I'm thinking it's time for some spring cleaning!

Gary your champ taters are most likely more traditional then corned beef! Salmon always works!
