Overnight chuck roll

I thought I'd try my first chuck roll after doing a few chuck roasts. I bought a 25+ lb roll at BJ's which I had cut in half, more or less, and smoked one half starting last night at 9. Used Rancher with hickory and apple. Except for the rain, the smoke went quite well. I don't know if I have these pics in order, but here are a few. At about 255 lid temp most of the time, it was about 12 hours in the smoke, 3 hours in double HD foil and 2.5 hours in a cooler. At 3am, the fire did dip to 212, so I made a vent adjustment and went back to sleep.The meat tasted great. I love the meaty flavor of smoked chuck.

It even smiled at me

Thanks guys. It was a fun smoke, and I even got some sleep. I could have done without the rain, but what can you do. Have a good Sunday

I need to try to do chuck again. Dave your finished product looks much better than mine. I did a chuck roast and I do not think it was quite the cut for pulled beef. A couple members said that a thicker cut would be a beter idea.

Your cut being a chuck roll I think is much larger than what I cooked. So next time around Chuck roll it is! Vince B
