Overdone ribs?


 
I did a test this weekend. I had two racks of St. Louis Style ribs. Rinsed, pulled the membrane, and seasoned them the same way. Put both on my WSM that was humming along at 270* at noon. At 2 pm, after two hours nekkid, I pulled one rack, double wrapped in foil, and back on the grill. At three pm, I pulled the foiled rack, unwrapped it, and back on the grill nekkid until done. Both were pulled just before 4 pm after passing the bend test. There was more pull back on the wrapped ribs. The wrapped ribs were slightly juicier. Other than that, we really couldn't tell much of a difference, liked them both, but a little juicier is always good. In the future, if I am cooking one or two racks of ribs, I'll foil. Any more than that and they can run nekkid...

That's a real nice comparison cook Terry. Both those ribs look fantastic, if I had to pick which one looks better, I'd say the one on the right, which must have been the unwrapped rack, as there's less pull back on it. But as you say, can't complain with juicier.
