Well after very little sleep the meat turned out great!! Everyone was very pleased with the taste of both the brisket and pork. The brisket had a great bark on it and a nice 1/4" smoke ring. The pork didn't pull quite as nicely as I was hoping for, but perhaps that is b/c I pulled it at 185. The brisket was also pulled at this temp and came out perfect in my mind. Didn't just completely fall apart but was tender enough to fall apart with a gentle tug. Can't wait to do another.
