And do not the origins of central Texas barbecue go back to German immigrants ?

Made the 30 min trip north to try Klemm's at lunch. I ordered a half pound of brisket and three ribs, Mrs Dollar got the pulled pork and hot links, we had to try some sausage from a German joint . The servings were generous , I actually got four or five ribs, one of them being the end bone, and far more than a half pound of brisket. The ribs were excellent, though they were fall off the bone, which I understand most of the public wants in a rib. Did not bother me, they were good. The brisket was a little dry and a bit over done but good. Was told they start their brisket on the afternoon before, and the owner is up at 4 am to smoke the ribs and they " rest " the brisket. Maybe this brisket rested too long.

Mrs Dollar's pulled pork was very good, though it was better with their sauce, which was a dark sweet , mildly tangy. The hot link was excellent, will have to try their bratwurst on another visit.

We got mac cheese, okra, cole slaw, and beans for sides. As sides generally go, all was average except the okra, which was very good. It was heavily breaded, not like the okra we fry at home with a yellow corn meal, but they put something in their breading that made it light and full of flavor. I would go back for the okra alone.

Did not get a chance to see their smoker. We parked right in front of the cook shack and I got a pic, but could not see inside. I strongly suspect there's a big offset in there.

Klemm's has closed. Not absolutely sure, but most likely due to covid.

Have no idea if they'll ever re-open.
