Well I think I accomplished my first smoke yesterday. I have to say I appreciate all of the answers to the dumb questions I had. I smoked a 5.5 to 6 lb butt. My wife bought it from the local supermarket. I still trimmed probably .5lb off of the butt when I got it home. I used the minion method and used a little bit of mesquite wood for flavor. My new WSM held strong. Since it was the first smoke the temp ran a little hotter than I wanted to but overall I think it came out good. What do you think? Jason

P.S. I put the Brats on as well...and they were tasty!

Very good. I'm sure everyone enjoyed.

Note - you do need some coleslaw to go with that pulled pork and some beans would be good too.

Also, I see you have your bottom grate in with no food on it. If you're not using the lower grate, you should remove it. Why clean something if you don't have to?

I think I've had my WSM for 3 years now, and haven't spent a lot of time in the South (mainly Tennessee and the Carolinas) I have yet to BBQ anything but Pork Butt for pulled-pork.
It's the whole reason I bought the thing.
Next time you do Butts try Apple/Cherry/Pecan...You'll never touch Mesquite for pig again!
 
Just realized I haven't had breakfast yet! Wonder why? Looks good....just missing the Carolina slaw right on top of that pulled pork sandwich....then it's grab the paper towels :)
