Well, i posted about the need to cook a butt in a crock pot since I'm staying in a condo for the 4th. I could have baked it but wanted to try the pot. It cooked much faster than i espected. I put a 7.5 lb butt on and didn't ck it for 7 hrs, at which time it was completely done. Internal temps were 205-208 and very tender. However, the fat didn't really render down like it does when i smoke it. I think it will taste fine with plenty of sause, and I know it is tender, but i've gotten used to really good smoked butt and this is a far cry.
 
Have antacids handy and you might try draining it on a rack. Use a similar rack to cook pork butt on next time and better yet, try a much leaner cut like picnic or even pork loin for croc potting. Or better yet still, BBQ extra butts when you can and vac pac freeze for such occasions. You never learn til you try, though, huh?
