Not Having a Good First Smoke


 
I finally pulled the Butt of the WSM at about 11:30 and finished it in the oven at 250. It finished at 1:30 with letting it rest. It was also suprisingly good. I forgot to take a picture. I couldnt believe how hot it was after resting for an hour.

Now that its over, Im excited to try again, of course using the Minion method.
 
John, your ribs look AWESOME!! And I'm sure they were very tasty!!
...as far as cookin' butts, I've decided to start the dang things like 4am so I can eet the meat the same day. Done overnight cooks butt I'm getting too old to deal with that idea, so the early am start works well (you may consider that).
So now, you can eet that butt all up and cook another one NEXT WEEKEND, suppose to be nice nice weekend as this one is.
Pull it and freeze it. Use it on/in everything
