Pulled out a 5 pound 4 bone rack…..started it about 10 and it just probed 198 in the thicker portion and still had a tad of resistance…..
Letting it go about another 30 and then into the cooler for a couple hours.
About 6 hours or so in total, went considerably faster than I thought it would.
E6 - We er brand briquettes - 2 hunks of hickory….it ran about 260 the whole time.
Oakridge SPOGOS and a touch of a local made brisket rub.
Not going to make much for sides, maybe a salad…..the pics so far.
Also finally treated myself to nice steak knives…..got a nice 8 pack ZWILLING…..caught a major sale close to 75% off….didn’t think twice.
They cut like lasers………..
