So Costco had the Aussy Racks of baby Lamb on sale and I picked up a couple.
So here we go, Gus in EVOO, Kosher and fresh ground along with some granulated garlic, and the rack of lamb dressed with EVOO Kosher and fresh ground and dried rosemary. I also dressed out a lot of the back fat.

Love cooking in the dark, Gus on first over left over Stubbs and five or six new coals.

Seared first and then on indirect until the fancy dancy instant read read 131 internal. Will keep rising while resting until 135 or so.

Your plate, serves with some creamy Yukons mashed by the CEO and some good red wine. These were absolutely delicious.

Bill I just finished a turkey BLT. Not complaining mind you. Matter of fact, I'm here enjoying a growler full of Avery 20th Anniversary with my son and feeling pretty good. Then you post this! Bill you sure know how to ruin an evening. :) Very, very nice.
 
Dang Bill I just finished 2 large plates of wings and rings and this is made me hungry again!

Looks like perfection on a plate Bill!!! I love those racks of lamb, they always seem to come out so tender when cooked.
 
Would not change a thing Clint, sear them first the way you want them, move to indirect until you read 130+ on your instant read and pull it and let it rest covered with foil for about fifteen minutes.
Slice between the ribs and serve. They are superb. The best Lamb you can eat, period.

What you have on that plate,and how you cooked it might be mine and Emilies all time favorite. Looks PERFECT!
 
I am sorry I don't want to sound like a pig but my plate does not have enough lamb. May I please have three more?
 
Bill, now I have to wipe off my iPad. Been drooling all over it!!! Rack-o-lamb is probably my favorite meal!! Beautifully done!!!!
