Hello All!,
Long time lurker. I finally bought my 18.5 inch WSM a few months ago and immediately did some high heat chicken breasts over apple which turned out very well. Yesterday I did 2 turkey bone-in breasts over apple and the results were stellar. The temps yesterday in NC were 70 so once it cooled off when I added the meat it climbed to 350 and stayed there with very little fiddling with the vents. Took them to a dinner with friends and received lots of complements.
Used a new Maverick 733 to monitor the cook. Very pleased with the Mav. It was nice to be able to do stuff in the house and keep an eye on things outside.
Up until now I had used my Weber Kettle to smoke butts and turkey. Pleased with the turkey on the WSM and looking forward to trying butts. On the kettle the butts were taking about 6 hours. 12 hours on the WSM should be twice as good.
