Hi, I'm Barry from Benfleet Essex in the South Coast of England. I've just purchased a WSM 18.5 inch because I like the idea of smoking food, I'm using it for the first time today and with 1 bag of charcoal (5kg) its still going strong 5 hours later (unlike the Brinkman I owned some 10 years ago and gave up on).I owned a Genesis silver B which I bought in 2006 and used all year round including cooking the christmas turkey for the last two years on a rottiserie last years one weighed 21 pounds but the motor held up ok, anyway this spring I noticed the link between the burners was rotten so I convinced my wife that the only cure was to buy a new bbq (weber of course) I purchased a Genesis S330 in february and it's great we bbq probably four to five nights a week depending on what we are eating, but as I said today I'm using the WSM so far today we have had chicken thighs which I cooked from the triple-play recipe from the weber complete bbq book they tasted great but to get a crispy skin I put them on the Genesis for 5 mins, I'm now waiting for ribs to cook (1 hour to go) which I took a guess at 6 hours. Oh I forgot to mention when I took The thighs off I put a whole chicken on seems a shame to waste all that empty grill space and to think there's only two of us at home today :o
