Hi All

I just got my first weber grill. A Performer Deluxe. I've used a gas grill in the past but I'm hooked on charcoal grilling now! I've only grilled steaks, chicken, etc on direct heat. I want to venture out into the BBQ world and low and slow cooks. What is a beginner type of cook people start off with BBQ?
 
A fatty is a really easy thing to start with and cooks pretty fast. The next step up would probably be baby back ribs.
 
In my experience, pork back ribs are a great way to start.
If you follow the recipe, you almost can't screw it up.

I like Memphis-style (no sauce) and the best How-To is from Malcolm Reed at howtobbqright.com

Here is my rub....

Joe's Pork Rub

1/3 Cup Paprika (double this to be more like Malcolm's and use a bright-colored paprika)

2 Tsp Smoked Paprika

2 Tsp Black Pepper

1/4 Cup Brown Sugar (bump up sugar a bit to be more like Malcolm's)

1/2 Cup White Sugar

1 TBSP Salt (cut in half is OK too)

1 TBSP Granulated Garlic (or Garlic Powder)

1 TBSP Onion Powder

2 Tsp Cayenne Pepper (cut this in half for less spiciness)

1/2 Tsp Cumin

1/2 Tsp Chipotle Powder

1/2 Tsp Ground Ginger

1/2 Tsp Celery Seed

1 Tsp Dry Mustard

1 Tsp Ground Coriander Seed

Yield : 1-1/2 Cups

Mop Sauce

8 oz. Apple Juice
4 oz. Red Wine Vinegar
4 oz. Vegetable Oil
3 TBSP Rub
(yield : 16 oz)

Use it as a template and make it your own !

Pork ribs are a great choice. Relatively quick to cook and they are real crowd pleasers. Baby back ribs are a little easier than spare ribs.
 
And don't forget Meatloaf.:)
Pork steaks or Country Style Ribs cook easily indirect on a kettle. I like Chuck roasts for pulled beef on mine.

I'll swim against the tide a little bit and say pulled pork, because it is so forgiving. If your temp shoots from 225 to 325, it won't really matter, you'll probably still get a great pork butt.
 
Yeah I'd probably do pulled pork just in case it takes a while to get the temp in the range you want
 
You can't go wrong doing an indirect Rib cook. Keep the temp around 225-250 and in about 4 or 5 hours, you'll have an amazing cook. If you want a simple mop sauce: Apple Juice, Brown Sugar and dark Rum (a 3rd each)
 
Jerome, welcome to the bbq world. Its great.

I think pork butt or spare ribs are great to start with. My first cook on a weber was a pork butt, can't really mess that up.
