New Hunsaker griddle

Got a Hunsaker griddle from my local grill store, St. Louis BBQ Store. I seasoned it with avocado oil and an onion, then cooked up some cheese steaks over one large chimney’s worth of Royal Oak hardwood briquettes. I may try a half chimney next time.

I also picked up a black stone starter kit from Wally World that included two spats, a flat scraper and a couple water bottles.

For a first cook, they came out quite alright.

Cleaned up while still piping hot using water, scraper and a cloth.

I’m open to suggestions, hacks or any other info that will make this more fun/useful.

That looks great and that griddle is a nice hunk of metal. I went with a dedicated gas griddle as when I use it for bacon I like to collect and save the fat to cook with.
 
Wow that thing is cool! If I didn't have my gas griddle I would be all over that.

How much of an ash/mud mess did that make while cleaning with the water?
 
I press a small a small foil drip pan into position under one of the "handle holes" on the Hunsaker before I heat it up, so that when its clean up time, I use the scraper and it all goes down the hatch into the drip pan. Not perfect, but better than making cement! (I don't use a lot of water when I use the Hunsaker. I mainly make smash burgers, use just a little water before I scrape clean).
 
Good work man. I have a blackstone, so at home I haven't felt the need to get the steel top off my pizza kettle and use as a griddle. It is always there if I feel the need to travel with my kettle and want that option.
