Tried a new pork chop recipe I saw on Taste of Home called “Ultimate Grilled Pork Chop Recipe”. I liked the recipe as it was very low in sodium.
First you brine the chops in a simple brine of salt, sugar and water for 8 to 12 hours.
Next coat the chops with canola oil and add the rub which is paprika, garlic powder, onion powder, cumin, ground mustard, coarsely ground pepper, and ground chipotle pepper. Let stand at room temperature for 30 minutes.
Grill to 140-145 let the chops rest for 5 minutes.
Barb made a macaroni salad and some steamed broccoli and cauliflower.
The chops were really simple and very good with a nice little bite to them.
In between brining I did some baking, a couple of loaves of Saturday white bread.
