I've ran my new WSM twice now to just get the feel for it. No meat. I'm using minion method with Stubbs briqs. Half chimney of lit on top of unlit. Ran it for about 4 hrs both times. Zero problems maintaining temp. However, both times I tore it down to clean it out the wood chunks, hickory, we're not consumed. They just looked like coal. I was expecting them to be fully consumed or at least down to coals. Was running it at 250 (lid therm) both times. The chunks were touching lit coals almost the entire cooks. Is this normal? Chunks were bags from Lowe's, Cowboy I believe.
 
Looks like coal-->that's OK ! They did their job. That your only concern?

BTW, a lot of us consider those "dry runs" you did just a waste of fuel. Double BTW: I've read cowboy is %&%$#€.

Congrats on you WSM. I can understand wanting to get a feel for it, but you can get a feel doing sausages and whatnot :)

I use Stubbs charcoal. The hickory chunks were Cowboy I think. Yep, no other concerns. Thanks. I am a long time smoker just new to the wsm. I've learned a lot about the wsm here. Great resource.
