need to chop up the smoking wood?

I am going to start using my woodpile of pure, dry, maple for smoking in my wsm.

It is already split into fireplace size pieces, so I plan to just split it down some more. I would not have fist sized chunks, but would have lengths about a fist sized wide, but about a foot long, just narrow fireplace pieces.

Any comments on this? Seems unnecessary to take a cutter and make them exactly like fist sized pieces.

I plan to just bury three of the long thin splits, in the charcoal, and that should be fine.

Depending on how much smoke flavor you like you might be able to get away with 1 of your "sticks".

Normally I smoke with 3-5 fist size chunks.

John - I had a lot of apple wood pieces the same size as your maple, but at the time I figured they would be better off being fist-sized pieces, so I cut them up with my circular saw. Now that I'm doing more smoking on my OTS, I have come to realize that I probably could have got by with leaving them whole, as I also use between 3 and 5 chunks per smoke.

However, now that I have a box full of fist-sized chunks, I can also burn them for direct grilling over live fire.

I'm sure you're good with the sizes you have; you'll just only need to use one at a time.

Just my 2¢...

It's a bit of work, but you can use a miter saw to cut fireplace splits to smoking length. The box holds them in place nicely, a lot safer than using a skilsaw or chainsaw, since they're relatively short.

Wood is wood ... LOL... as long as it fits in the smoker your good to go...
