need some help!!!


 
i started my fire this morning at 7 to cook a small shoulder and a rack of ribs... the temp got to 250 within about 30 -45 mins from starting then drastically has fallen off, i can not get it over 200-215 and maintain for any length of time.... it is about 25 degrees outside now, 10 mph wind... i do have somewhat of a wind block up now but i have no clue what is going on.... and pan is half full of water now....help!!!!
 
The cold isn't really a problem, but a cold wind can be a real temp killer. Do whatever you can for a windbreak. Also, you will need a bit more fuel than usual, so expect that.
 
More fuel, block the wind. Open vents untill you hit target temp then shut them down in 1/4 increments and wait 10-15 mins between vent adjustments to let the temp stabilize, it should settle in.

I put on 3 loin back racks @ 11am. Temp outside was 9* w/10MPH winds.
2 weber chimneys full of lump and one 3/4 chimney lit, minion method.
Temp has been bouncing between 250-275*...I can live with that. Oh, I did have to use my welding blanket to block wind.

Post facto, increase the amount of lit.

... sounds like it should have gone about like your last cook with similar conditions. The wind, not the temp, is your enemy....even an ugly windbreak can do the job http://picasaweb.google.com/lh...PcaA&feat=directlink ... always start with plenty of fuel...3 chimneys and use 1/2 half pan of boiling water on a colder day, if you use it

thank you to everyone who had some input on my issues today.... after putting together my windbreak!!! everything seemed to come toghether beautifully!!!!! ribs got done about 20 mins before my butt did and i was very happy that despite everything it all came together and took about the same time i as i was planning on.... again thanks for the tips and here are the pics!!!!!!

good to have a huge crawlspace where all your friends like to keep there stuff..... the best i could come up with under the circumstances but i promise i will build one before my next cook...............
