Naked Ribs, Dutch's Wicked Beans, and poor mans burnt ends

Happy belated fourth! Our neighbors hold a block party and everyone brings side dishes and other great things to eat. This year I decided to make Dutch's Wicked beans. My youngest wanted to make something also so he was in charge of making poor mans burnt ends.

Poor mans burnt ends consist of your favorite hot dogs cut up into 1" or so size chunks. 1 20oz. can of pineapple drained and a bottle of your favorite BBQ sauce. You can also add brown sugar, and other spices, but I wanted to keep it as simple as possible and no heat as this side was really meant for the kids. There were a bunch of adults liking it too and it was gone pretty quick!

So are the 3 racks of Baby backs.
 
Decided to use the 18.5 WSM instead of three mini-wsms. Loaded it up with KBB, cherry, and apple.

I added the Weber therm port. Works great. I have another one to install for the lower grate too, but it has gone MIA in my shop. Thankfully I looked prior to drilling the holes!

Great looking cook nice to see your son getting into cooking. Those Wicked Beans look delicious.
 
More on the ribs. I rubbed each rack with a different rub. Two got Savory spice rubs, Mt Massive steak rub, and Plank Street rub. The third rack got my normal Salt, Pepper, garlic, chipotle rub.

Here they are the 3 hour mark. I just put the beans and poor mans brunt ends in. I decided to add some BBQ sauce to the ribs since there was a bit left over from the burnt ends.

Great looking cook nice to see your son getting into cooking. Those Wicked Beans look delicious.

Thank you! He's been my sous chef chopping veggies and onions for me since he was 3! The wicked beans are wicked good!
 
Nice looking cook. I have made the Dutch's Wicked Baked Beans and everyone loves them. Don't know if its the same recipe your using (I found it on smokingmeatforums.com).

Thank you! Yeah he's a great sous chef! I think that he has started to catch on though about always me asking him to chop the onions!

As Pit Master he has claimed the Mini-ZA oven smoker as his. He loves cooking on that thing!
 
The only thing I did different than what Dutch did is, I use crushed pineapple so that way you get a bite throughout the beans

Yeah that's why I go with the tidbits and the 20 oz. can. Gives you more pineapple. If I hadn't been serving this to other people I would have chopped up one of the other Serrano's too. The heat was good but it could've been hotter!

I can't believe how much your son has grown in just one year. He was pretty young back when he was cooking pizzas in your Mini-Za Oven, he looks like he might be old enough to sneak dad's car out in the middle of the night :)

That hotdog dish he did. Try doing it with grape jelly. Yup, I do mean grape jelly. You can also do meatballs and grape jelly. It's very very very gooooooooooooood
