Yep you heard that right! Skin not turning out like you want, get rid of it! Standard Mini-WSM chicken set up for me, KBB, Cherry, Kiawe, High temp, no diffuser.

NO SKIN!

Seasoned with olive oil, minced garlic, fresh rosemary, fresh thyme, fresh sage

Excellent looking bird, about as moist looking as you can get! Love the fresh herbs, and my wife prefers it cooked with the skin off.
 
That looks terrific! Thanks for the pictures and the cooking info. Definitely one of the next cooks going into the mini.
 
Like your approach Case, I do a lot of HH chicken on my 18.5 WSM with no water pan and what do I do when it's done...Take the skin off. Going to try your method and use my mini also.
 
Done a few birds like this and i really dig it. Yours looks awesome bro! Depends on the rub/baste But IM a BIG fan!

Thanks Rich! In my opinion HH is the only way to cook poultry! Unless you salt crust one.

Thank you! We usually keep the rubs pretty simple. Typically just salt pepper garlic.
