Nacho Cheese, Smoked Potato, and Broccoli Soup

not sure why but while I was skiing Cheesy broccoli soup started sounding good..... I saw this nacho cheese recipe the other day, and I'm posting it so you can bet it turned out well.

this is in my 8 quart stock pot so I have almost 2.5 gallons of this goodness...

2 heads of broccoli crowns roughly chopped (like 2 heads of lettuce or cauliflower size)
1 large red onion, chopped
~1 cup white rice
~1.5Tbsp worchestershire sauce
~2Tbsp dried onion flakes
~2tsp granulated garlic
pepper
sea salt-----maybe 2+ Tbsp
edit: I forgot to mention I used ~1.5Tbsp lobster base and about 24 oz more than 1 gallon of water. I thought the lobster base was a mistake right when I put it in (fishy taste as I rinsed the spoon) but as soon as it hit a boil I knew it was going to be alright (by the smells).

Mixed up a nacho cheese sauce: http://www.fifteenspatulas.com/homemade-nacho-cheese-sauce/

I doubled the recipe, this used 16 oz half & half & 1 pound of sharp cheddar

stick blended the soup & poured in the nacho cheese:

And while it ain't a plate of ribs, it sure was good! I always enjoy a smoke/baked potato. I mixed some chives, garlic powder, & celery salt in a remnant tub of sour cream.

and in case you're wondering what I had for dinner yesterday - pork chops! (one Terriyaki & one Jerk) & leftover asparagus, & mushroom soup.

Great looking soup. Thanks for the recipe too Clint. Plate looks delicious. Like the show pic's too. It's not too hard to figure why broccoli soup sounded so good to you!

Great post. Love all the pictures and the food all sounds and looks so good. I am also very partial to a smoked tater.....Great stuff.

Great looking cooks, Clint. I'm a big fan of using any extra space on the WSM to smoke/bake potatoes. Oven roasted has nothing on them and any leftover smoked spuds make for some real tasty hash browns the next morning.

Clint, you out did yourself again that's some fantastic food for sure. Love the snow pics and soup was a excellent pick.
