not sure why but while I was skiing Cheesy broccoli soup started sounding good..... I saw this nacho cheese recipe the other day, and I'm posting it so you can bet it turned out well.
this is in my 8 quart stock pot so I have almost 2.5 gallons of this goodness...
2 heads of broccoli crowns roughly chopped (like 2 heads of lettuce or cauliflower size)
1 large red onion, chopped
~1 cup white rice
~1.5Tbsp worchestershire sauce
~2Tbsp dried onion flakes
~2tsp granulated garlic
pepper
sea salt-----maybe 2+ Tbsp
edit: I forgot to mention I used ~1.5Tbsp lobster base and about 24 oz more than 1 gallon of water. I thought the lobster base was a mistake right when I put it in (fishy taste as I rinsed the spoon) but as soon as it hit a boil I knew it was going to be alright (by the smells).

I doubled the recipe, this used 16 oz half & half & 1 pound of sharp cheddar
stick blended the soup & poured in the nacho cheese:
And while it ain't a plate of ribs, it sure was good! I always enjoy a smoke/baked potato. I mixed some chives, garlic powder, & celery salt in a remnant tub of sour cream.
and in case you're wondering what I had for dinner yesterday - pork chops! (one Terriyaki & one Jerk) & leftover asparagus, & mushroom soup.
and just for fun:
it was like a nice spring day @ Snowbird.
