Several years ago I had the opportunity to try a California Roast. After that I would make them from time to time. Then I met the bacon weave courtesy of the BBQ Pit Boys. So I finally made a seasoned pork tenderloin roast, wrapped with marinated boneless skinless chicken breast, wrapped in a bacon weave.
I saw it on the internet but I don’t know if it has a name. Here are a few pictures. I forgot to take a shot of the tenderloin before doing the wrap but as you can see it’s in there.
It was cooked over indirect heat at about 350 until the tenderloin reached 160. Let it sit for 10-15 minutes while I looked after the sides.
