I've read about and have wanted to try Larry R's JD & Maple brine for several years now and now I'm doing it.
I grabbed a 11.87# natural turkey (butterball) from Costco, along with a spiral sliced ham... I had 2 turkeys in my cart, figuring one to be a Jamacian Jerk but then the Ham caught my eye.
I was a little disappointed when I realized I hadn't bought quite enough whiskey, so poured myself another 3oz drink out of the 8oz (1 cup) I'd reserved for the brine. I'll have to pick up some more tomorrow .
I also didn't have any pickling spice, much to my surprise, but I had everything needed to make it and so I did.
Several improvisations, I'm sure, so don't let my interpretation of the recipe dissuade you.
I'll try to update the thread as time progresses.
