Just a few of the things we served on Superbowl Sunday this year came from my smoker. Turned out very good!
Here is my set up (14.5):

I put a 9 lb pork butt on at 4 AM (not the best pic):

Rubbed the butt down with an Eastern NC style rub that is really good, used this on ribs as well. Has paprika, salt, pepper flake, garlic onion flake, etc. Mixes well with apple cider vinegar:

Put ribs on at about 10am, used the same rub as above, here they are after an hour:

Ribs finished, about 5-6 hours unwrapped, then wrapped in foil and places in cooler for about 2 hours:

I did baste the ribs a few times with apple cider vinegar throughout the cook.
Pork butt took about 12 hours at 225 - 240 most of the way, had to refuel once:

It just fell apart taking it off the wsm! I kind of patched it back together and let it rest in foil/ cooler for about an hour before pulling. Internal temp was 185 when I took it off.
I typically use George's Eastern NC style, and did on both the ribs and pork butt. This in my opinion is the best store bought Eastern NC sauce there is:
