Thx to an Alton Brown recipe, I tried the "ring of fire" chicken. Cue Johnny Cash. For me chicken is really challenging. Most folks overcook it to be sure that it's done. But that obv dries it out. Regardless of using my therm, there always seem to be undone sections.
I'm hooked on my Summit, so that was my tool for today. I've never brined chicken but there's always a first time. 1 quart of water, 1/2 cup honey, and 1/3 cup salt. After 1.5 hours I took it out, dried it and applied the rub. 10 minutes high heat, 25 minutes lower heat. Made baked potatoes with garlic and butter. Also had some jersey corn with butter and lime juice.
The question I always ask after trying something is would I make it again. The answer is yes!
