This was not only the first turkey I have ever cooked, but was done on the WSM at 250-275 with a hint of peach wood! Turkey was rubbed with butter under the skin, and then a coating of oil on the outside with Salt, Pepper, Garlic, Rosemary and some lemon zest.
I did not want to put stuffing inside it, so I put a couple of halved apples and white onions and a celery stalk or two...
After I got this color, I moved her to the roasting pan, added apple juice and a couple rosemary sprigs.
By far, the most tender, flavorful bird I've ever had (and my family as well).

Just as a side note, the pieces of skin you can see missing was from the wife and mother-in-law before I had a chance to take a photo!
