12 pounder. Brined it 12 hours, rinsed well, injected it, rubbed it.
Can't let that top rack go to waste so threw some ribs on...

How long did it take? What temperature did you keep the smoker? Any water in pan? I am doing one next weekend so any tips are appreciated.
 
Curt it's on now. Put it on at 11am eastern, temps holding between 225 & 230. I always use water in the pan. I plan to go for 6 hours. I think some folks like to run turkey a little hotter, but we will see how it goes. I must not have the probe in the turkey right, it was showing 190 degrees after an hour. Going to wrap the ribs now and I'll try to reposition that probe so I have an accurate internal temp reading...
 
Well it's pouring rain here in CLT and now that food temp sensor isn't reading anything at all. getting a signal, just --- showing in the display. They say the Maverick is not water proof, don't submerse it, but it is "weather proof". Not sure what the deal is but really wanted to make sure I hit the safe temp with my first bird. I will try to reposition it at the 6 hour mark. Guess I can use the analog $2 temp gauge but that's not as cool.
 
Always have a simple backup gauge. I look forward to the final results. Also, go Packers you guys picked up an awesome RB in the second round.
 
Old skool temp gauge worked fine. 6 hours was fine, wrapped it in foil, put in a cooler let it rest about 20 minutes. Going to return the maverick to amazon if it doesn't boot up tomorrow morning after drying out.
Full basket of coals but temps started dropping about the 6 hour mark and after taking off meats, checked and most of the fuel was spent.
Does that seem strange? About 58 degrees in CLT, raining a lot. Did I just burn a lot to maintain that 230ish in the weather?
Bottom vents were about 1/2 open most of the cook, top full open...
