I threw on a 7.8 lb butt last night at 10. I haven stuck at 165 for two hours. I got nowhere to go and can wait it out. My question is would you wrap or ride it out?
 
I would definitely ride it out. Especially since you mentioned you have not place to go. I usually find that a butt thatsize takes me in the 12-14 hour time. Enjoy the day and then later enjoy the pulled pork.

Don't worry so much about the internal temp once you get in the 190's, after that it's all about when you can twist that bone out with only finger pressure. It might be at 195 or 200 or even 205 but I doubt 205.
 
I regularly place my butts in an aluminum foil pan, and foil, at 160 degrees. I pull them when they are ready. I LOVE my Maverick, also. I have been able to pull as early as 195 degrees and sometimes have had to wait until 205+ before they were ready.

if I were in your shoes I'd tear a piece of it off & see how it tastes. (quality control is important)
 
I like the bark so prefer not to foil. Old school I guess. My son likes to foil and add secret sauce to the mix. 'Course - he's young and impatient. LOL :wsm:
 
The wait was well worth it. You know you nailed it when your wife starts giving it away to neighbors that have just had babies and surgery.
