My first smoke on my Weber 22.5 pt1

Thought I'd start of with all things pork.

Rubbed a 8lb shoulder and a smaller rack of ribs. Cling wrapped and left for 24 hours.





Loaded her up with near 16kg of coals. Alot but I wanted to see exactly how long it could hold its temp. Iwas looking at an 18hour overnight smoke.








Added a couple of off cuts from my rosemary bush that exploded in growth over the summer.



Got it up to temp in about 15 minutes

About 12.30am and I'm gonna take the ribs off. They were on for about 7 hours at this stage











Next morning. It had gone unchecked now for about 11 hours.

 
Delighted to see the temp was still holding after all that time unchecked





By the look of the coals, I could have goten another few hours of cooking time.

Time to get the sides on the go. First we have some burnt end beans


Then some potato salad



Got some homemade bbq sauce reducing



Sauce up a few ribs and into the oven to reheat



Made a little chilli and pepper jam



Used a mix of fresh and roasted peppers





Time to feast :)



Instead of a plate of food we went for toasted pittas stuffed with all the goodies



All in all a very enjoyable days cooking. Really happy with the way the Weber can hold its temp.

I need to go on a diet!
